|Perline is very small fresh mozzarella, which is in the center of each rice ball.|
|Shape into balls and place in the fridge to set, then dredge in flour, dip in egg and roll in bread crumbs.|
|Fry in oil ( I probably could have added more oil, but a girl gotta watch her waistline).|
There is an restaurant in NYC that sells rice balls called Arancini Bros check out their blog you can get plenty of ideas if you want to make your own. Giada from the Food Network has a really good recipe too!
