Arancini Anyone?

What's arancini you's a stuffed and fried rice ball. OMG it's total deliciousness!! Now here's a quick backstory on how I discovered this delectable goodness. We were out to dinner with our good friend Ron and we began talking about holiday traditions he told us about how they make rice balls during the holidays. To be perfectly honest I wasn't exactly sold, I guess I needed a visual. A few days later I was watching the Cooking Channel and they did an entire episode on arancini.......can you say DROOL!?
Last night I made my first batch

I found this recipe on the Internet - very simple. I made the risotto the night before, risotto is good all by itself. Risotto takes forever to make stir, stir, stir and stir some more it's worth it though. I use to make it all the time many years ago but I stopped, now I know why, too much stirring.

Here are all ingredients

Perline is very small fresh mozzarella, which is in the center of each rice ball.

Shape into balls and place in the fridge to set, then dredge in flour, dip in egg and roll in bread crumbs.

Fry in oil ( I probably could have added more oil, but a girl gotta watch her waistline).

There is an restaurant in NYC that sells rice balls called Arancini Bros check out their blog you can get plenty of ideas if you want to make your own. Giada from the Food Network has a really good recipe too!

  1. One of my ultimate favorite foods! My friends mom always filled them with a little sauce, mozzarella, sausage and peas. YUM! We made them once and haven't again. Should try them again soon! Thanks for reminding me how yummy they are!
