The other day while browsing the web I began searching for salad recipes and I came across a really good one Asian Noodle Salad it has everything flavorful and healthy in it, but of course I have to make it my own so here is my version.
Don't be intimidated by all the veggies....red pepper, yellow pepper, spinach, cilantro, jalapeno pepper, garlic, ginger root, green onion, broccoli slaw and red onion
cook the orzo according to the package
roughly chop and toast 1/2 cup of cashews
make your dressing
1/4 cup of soy sauce
the juice of one lime
1 tablespoon of agave nectar
1/3 cup of olive or grape seed oil
2 tablespoons of sesame oil
slice green onion, chop peppers, grate ginger root, chop spinach, chop cilantro, mince garlic clove and pour in the entire bag of broccoli slaw, the slaw gives the salad crunch and a little snap!
to assemble the salad add pasta and veggies to a large bowl and combine
don't hold back on the cilantro it really makes the salad
this dressing smells so good the sesame oil and cilantro really gives this salad a robust flavor
once the salad is tossed you can also add tomatoes, doesn't it look good? Look at the colors pretty :)
If you have never cooked with ginger root give it a try it really gives your food some added zip. I use a box grater and I grate the ginger root it's easy to do.
