Happy New Year! Today I want to share with you one of my favorite salads, I love trying new veggies and recipes so if you want to mix it up in the kitchen give this a try.
If you have never tried kale before it is on the bitter side but you can jazz it up and that's what I'm about to show you.
| Sweet potatoes, raw pumpkin seeds, lemon and kale |
| chop sweet potatoes drizzle on one tablespoon of extra virgin olive oil and roast for 50 minutes @ 450 degrees in a covered pan be sure to check halfway through and turn |
| toast the raw pumpkin seeds over medium heat for 8 to 12 minutes watch closely you don't want to burn them |
| while your potatoes are roasting and your seeds are toasting :) clean, chop and rinse the kale remove the ribs of the kale |
| I used white balsamic vinegar and the juice of a lemon to flavor the kale about 2 tablespoons of lemon juice |
| sweet potatoes are roasted just add a little salt and pepper to taste I love them crispy |
| assemble the goodies kale, toasted pumpkin seeds, sweet potatoes and I also used chopped dates it's a nice flavor to add to the salad
