Potato and Spinach Fritatta

Hello Readers,

Are you looking for variety in your meal planning? If so, maybe this recipe will strike your fancy. While surfing the web I came across a recipe for a fritatta so I decided to give it a try.


simple ingredients nothing fancy

I cleaned and sliced two red potatoes and then par boiled

chopped 2 cups of spinach

I also chopped red pepper, white onion and  fresh parsley

after sauteing the onions and peppers I added the two potatoes

1 cup of eggbeaters and 3 eggs


add fresh parsley

transfer potatoes, peppers and onions to a larger skillet

add chopped spinach, salt and pepper

pour egg mixture over spinach

continue to cook over medium heat until set and then place in oven at 375 degrees for 10 minutes

remove from oven and flip onto a cutting board

slice and enjoy
